With summer waning in most of the country, I thought I’d make one last homage to summer time by making home made ice cream sandwiches with home made chocolate chip cookies. I love taking these as a dessert when going over to a friend’s house – they are so easy! Since you assemble them right before you eat them, they are versatile and you basically have 3 dessert options in one!
To make the cookies soft for sandwiching, it’s best to bake any cookie recipe per directions, but take them out about 5 minutes earlier than the recipe states. The cookie might not be as browned, but it will be soft and chewy, perfect for sandwiching.
Take two cookies, scoop one scoop (or two if you’re my hubs) onto one cookie and then place another on top. It’s a simple way to dress up two perfectly fine desserts that are definitely better together than apart! For a less messy alternative, just place the cookie in a bowl and add a scoop of ice cream over the top. Or, scoop your ice cream into a bowl and break the cookie in pieces over the top of the ice cream. Kids LOVE doing this!
I liked to wrap mine in foil to help keep it cold – this would also be good if you made them ahead of time and then put them in an ice chest. Other cookies that are good for sandwiching are snickerdoodles, peanut butter cookies and sugar cookies, but my favorite is a classic chocolate chip!
