easy chocolate toffee squares

I found this recipe on Pinterest and immediately posted it to my NomNom board, it originally came from here.

Last year I had tried this recipe at a friends house and had been meaning to get the recipe from her – she had told me it was ridiculously easy, but it wasn’t until I tried to make it that I realized she was not exaggerating!  I whipped this up in no time at all and then began sharing the wealth; there was no lack of satisfied palates, this recipe is a winner!

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Yield: approx. 40 squares

Ingredients

  • 40 (or enough to line the pan) saltine crackers (I used salted tops)
  • 2 sticks unsalted butter
  • 1 cup packed brown sugar
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup or more slivered almonds (or any other nut)

Cooking Directions

  1. Preheat oven to 400 degrees and line your cookie sheet with aluminum foil. Line up saltine crackers in a single layer on the cookie sheet.
  2. In a small pot combine sugar and butter and bring to a boil. Once mixture is at a boil, continue boiling for 3 minutes. Mixture should be a deep caramel color. Immediately pour over saltines and spread to cover crackers completely.
  3. Bake at 400 degrees for 5 to 6 minutes.
  4. Remove from oven and sprinkle chocolate chips over the top and let sit a couple of minutes to melt. (You could also melt the chocolate chips in the microwave for about 1 minute then spread it on.)
  5. Spread melted chocolate evenly over crackers.
  6. Top with chopped nuts if desired (I made 1/4 of the pan with chopped nuts and the other 3/4 plain).
  7. Cool completely and use pizza cutter to cut into squares.

 

Who knew that simple, common staple saltine cracker had it in ‘em to be the foundation for such a treat as this?!  Obviously a handful of people because this little “secret” has been floating around the internet for some time now; I’m kind of surprised that I only now just tried it. It’s quick and easy for an impromptu get together or you can tweak the ingredients and gussy it up for a dinner party.

sugar-free sweet cinnamon pull-apart buns

The little pull-apart buns are a perfect blend of sugar sweet and cinnamon spicy, but they are sugar-free! I could eat these all day long…

Sugar Free Sweet Cinnamon Pull-Apart Buns

Prep Time: 9 minutes

Cook Time: 11 minutes

Total Time: 20 minutes

Yield: 6

Ingredients

  • 2 Tbsp butter, melted
  • 2 Tbsp sugar substitute (I used Splenda)
  • 2 Tbsp cinnamon
  • 1 can (5 count) Pilsbury flaky layers biscuits

Cooking Directions

  1. Preheat oven according to directions on biscuit can.
  2. Grease a muffin pan and set aside.
  3. Open can of biscuits and separate into 5 biscuits; cut each biscuit into 4 pieces.
  4. In a shallow bowl, combine sugar substitute and cinnamon until well blended.
  5. Using a fork, dip 3 of the biscuits into the melted butter just long enough to wet them. Then toss them in the cinnamon-sugar mixture until coated.
  6. Place the 3 biscuit pieces into one muffin cup, place them side by side, not on top of one another.
  7. Repeat with remaining biscuit pieces.
  8. Bake according to directions on the biscuit can.
  9. Remove from oven when edges are golden brown and transfer to cooling rack.
  10. Let cool for 5 minutes and then serve immediately, or store in an airtight container up to 3 days.

 

I’m not much of a coffee drinker, but I’d bet money that these are WAY better than that traditional coffee cake.  Plus they are sugar-free! What more could you ask for?

simple sewing project: monogramed tee shirt

A while back Kelli and I were talking about sewing and came up with a great idea to do a sewing series!  She started by posting a tutorial on how to sew an embellished baby onsie.  My response? A toddler sized T-shirt with a monogram!

I chose to do a t-shirt because at the time I couldn’t think of any friends of mine who have babies in onsies.

Or maybe I couldn’t think of any friends who have a baby in a onsie that I’d be willing to let them see my first sewing project!

Enter Jes – if there is any friend who has seen me in some embarassing situations, it’s Jes.  Nevermind that it’s usually because Jes and I come up with the most ridiculous ideas when we are together!  So I decided to make a cute little t-shirt for Jes’ daughter, Rayah.

So can you tell I learned a few more things other than sewing? I hadn’t planned on getting (yet another) lesson in patience or humility, but I suppose those aren’t bad things to improve on…

So, what did you think? How did it turn out? Rayah loved it!
