I work from home – which usually means lunch is leftovers from dinner the night before, or it’s just a combination of snacking all afternoon long. I had a rotisserie chicken in the fridge and I happened to have some spinach and hummus on hand too, so I made something new for lunch the other day. A chicken & red pepper hummus sandwich! I love using hummus as a sandwich spread – it’s way better than mayo and less tart than mustard; plus with all the flavored hummus available these days, the options are almost limitless.
I like the red pepper hummus with this combination of cucumber slices, spinach leaves and chicken breast. Assemble all of it on top of some toasted slices of whole grain bread and you have a lunch worth ignoring the phone for.
