Easy Homemade Fruit Pizza

A few months back I was in Colorado and I had dinner with some girlfriends one night.  It was a potluck style dinner – those are my favorite – and one of the girls was serving up Fruit Pizza for her dessert.  I was pretty sure I had Fruit Pizza before, but I recalled that I wasn’t a big fan of it – mostly because I’m not a crust girl.  I just don’t typically like crusts – which is quite weird since I am DEFINITELY a bread girl.  Alas, I digress.

Being the good dinner guest I am, however, I served a slice of the Fruit Pizza to myself and took a bite.  It literally melted in my mouth!  I immediately knew there was something different about this Fruit Pizza than the ones I had eaten before.  What was it?

The crust! It wasn’t a typical crust! I gently inquired…and found out it was a sugar cookie dough, rolled into a large rectangle to create a crust. Genius!  Inspired by the delicious concoction, I ventured out to recreate it for myself.

Last night I decided to make Homemade Individual Fruit Pizzas, so in lieu of making one large crust, I made a batch of sugar cookies and decided they would be the perfect size for individual servings.

I cooked the cookies all at once and then allowed them to cool for a couple of hours.  Normally I do NOT have the necessary restraint to allow for proper cooling time, but this time I made them right before I ran an errand, so I had no choice but to leave them at home to cool while I was gone. The added bonus to this was that when I returned home the whole house welcomed me with sugary smells.

Having the “crusts” done, I then made the icing.  To make the icing I recommend you use 1 8ounce package of cream cheese (softened) and 1 cup confectioners (powdered) sugar.

Mix well until both ingredients are well combined and your icing is nice and smooth.  Then I prepared the fruit.  You can use any kind of fruit, but I personally think the following fruits are very complimentary to this recipe and are easy to work with:

  • Mandarin Oranges
  • Strawberries
  • Raspberries
  • Kiwi
  • Pineapple Chunks

Line up the cookies on a platter and prepare to assemble the Individual Fruit Pizzas.

Spread as much, or as little, of the icing as you prefer onto the surface of the cookies.  Then, top with fruit, being careful to have nice presentation as you go.  Once completed, set the platter out and allow everyone to grab their own.  make sure you grab one too, because they’ll  get snatched up quickly!

Individual Fruit Pizzas

If you don’t have many guests (or children) to serve the pizzas to, then I suggest you only assemble as many as needed. The icing and fruit will usually keep in the fridge up to a week and even if you run out of these, the sugar cookies are tasty enough on their own as an after dinner treat, or a midnight snack!

Dress Decisions

So I’ve been thinking about dresses for the wedding. Specifically – mine.  I had a quincinera when I was 15 and my mom took me to a bridal store and we bought a gown for me to wear to the party.  It was a bridal gown and it had puffy off-the-shoulder sleeves.  Hey – it was the mid-nineties…puffed off-the-shoulder sleeves were HOT.  The lacy fingerless gloves? Ok, I’ll give you that one – they were NOT.

Now that I’m coming full circle and again contemplating buying an over priced super white dress, I’m kinda thinking my views have changed. For one – I’m highly considering buying a used gown.  The sheer thought of this horrifies my mother.  Perhaps this is why she was so generous in offering to pay for a gown.  Great. I have pitied my mother into buying me a bridal gown…

Still, I just can’t justify spending hundreds of dollars on a dress I KNOW I’ll only wear once!

So maybe I should buy new?  While looking for new dresses I came across a several sites that offer to duplicate couture gowns for a fraction of the cost. And I just don’t mean a small fraction – we’re talking a large fraction!  Gowns that sell for thousands of dollars are being replicated and sold for two to three hundred.  The catch?  You don’t get to try it on until you own it.

They can offer such great deals because their overhead is low – and they love what they do.  So what do I do? Simply try on styles of dresses I love, get my professional measurements and send them a check, with my measurements, and a photo of the gown I’d like.  Seems simple, right?

And I mean, even if it’s a total rip off – at least you only lost two to three hundred dollars.  You could still go buy an inexpensive gown and cut your losses.

The gown duplications are pretty awesome – it’s just a lot of trust in several unverifiable factors.

First Order of Business: Pick a location

You might be thinking: Don’t you need a date first before you pick a location?

Yes, you should have a date in mind, however, if it is a unique date or a popular date, you may want to first check to see if you can get a location for that date!  We have found that several venues that were nice options immediately got knocked off our list because they don’t have the date we want available.

Right now our plan is to nail down a location, then we will announce the date!  For those minds wanting to know, we have decided where the wedding will be – in terms of major geographical location.

Originally Thomas and I both liked the idea of the destination wedding.  But, what we liked more than that, was knowing all the people we want at the wedding could have a fair chance at coming to the wedding.  So, after much thought and consideration, we’ve decided to have it here, in Texas!

Either way we went both of our parents would have had to travel to the wedding site, but the majority of both of our friends live here, I live here and this is what I (after years of getting used to it) call my HOME.  In fact, Thomas calls Texas home even though he’s moved all over the place.  I guess the old adage, there’s no place like home, rings true.

So we are on the hunt for beautiful outdoor locations in the North Texas area.  We have a couple of very sentimental places we are considering, but we haven’t picked anything for sure.  We are keeping our options, and minds, very open to see what the Lord provides for us.  Stay tuned….

engaged and planning a wedding: lessons from my childhood

So I recently got engaged!

I am really excited about it and I am thankful because Thomas and I have decided to wait until next year to get married. Ummm, let me correct that. We feel like it’s the right thing to do, and what The Lord wants us to do, to wait until next October to tie the knot.

However, it’s working out quite nicely that we can wait a year to have a wedding. In a world where drive-thru weddings and fast track engagements are all I’ve seen the past 7 years, I’m glad to know that longer engagement periods are still ok.  I personally prefer having LOTS of time to plan and get ready for the big day. I’m way too much of a stresser to do the whole 3-month engagement.  To be fair, we also live hundreds of miles apart, so that makes it easier in terms of “not being tempted to go too far” or so that’s what my friends cite as their main reason for hurrying to the altar.

So Thomas and I have decided to create a wedding budget.  I’m very proud of us for doing this because I am quickly realizing without one, you could drop a pretty penny on this kind of event.  I’ve been reading up and I think I saw somewhere that the average cost of a wedding today is $30,000.

And you think we’re in a recession?  Hmmm.

Sadly, most of the people having those $30 grand weddings are not paying for it up front, but are actually going in to debt for it. I’m sorry but I think that’s the stupidest thing I’ve ever heard of!  It’s just a party for crying out loud!

I understand that I may be biased here, but I am speaking from experience!  At 15 my mom threw a quincenara for me (which in itself is bizzare considering she never really identified us with any sort of Latin/Hispanic roots, but whatever…I was 15 and getting a huge party. Like I was gonna resist?) and so I got to learn first hand what all goes into a large party.

After that experience I feel like I’ve decided that many, many things are not worth the money they cost.  In fact, I think there are only 2 things that are worth it: Photography and location.

And really, in the end, photography is the only one that holds any true value.  13 years later I’m looking back on that day and I remember a few things:

I remember some of the girls not doing the right dance moves

I remember my dad being there, even though it was causing awkwardness with my mom and her family

I remember my childhood best friends getting up and giving a speech about me and our friendship

I remember I didn’t get to eat the food I picked out

I remember barely making it to get a slice of my own cake

I remember my cheeks being sore from smiling so much

And sadly, I remember someone telling me it was time to go and I felt like I had just got there.

That last memory was the one that has stayed with me all those years and is ultimately what is driving me now to have a small, intimate wedding that is’ budget friendly but remembered fondly. So here’s to the start of my wedding planning!

Oh, and did I mention I may have to spike the punch?
